chocolate moussé tarts (vegan, GF, paleo, almost raw)


I'm a biiig chocolate lover and consume it whenever I get the chance! So when I heard my aunt and cousins were coming for dinner, I knew I had to make something delicious for dessert. I ended up with these tarts that taste so freaking delicious, Its hard to control yourself.

They taste:
Rich
creamy
chocolaty 
bittersweet
with a hint of cinnamon

Moussé filling // ingredients

▻ cream of 1 and a 1/2 can coconut milk
▻ 50g cocoa butter
▻ 80g raw cacao
▻ 50g maple syrup (or more if you prefer a less bitter mousse
▻ 1/2 tsp vanilla powder
▻ 1/2 tsp cinnamon
▻ pinch of salt

(( you can also use store bought chocolate of your choice ))

directions 

1. melt cocoa butter in a bowl over a pot of simmering water.
    Stir in cocoa powder, vanilla powder and cinnamon.
    Then the maple syrup. It will thicken up a lot, but that is okay.

2. Add in the coconut cream. continue stirring over a low heat. This will take some time, but its definitely worth it.

3. If you get any lumps you can use an electric mixer to get them out. even if you don’t, I would still recommend it, because         it makes it super airy :)

4. chill in fridge until it firms up or over night.

♡ The mousse is delicious as is, but add on the tart shell, and berries it really take it to the next level. 


tart shells // ingredients

▻ 90g walnuts
▻ 30g dates (measured without the pits)
▻ 1 tbs coconut oil

directions 

1. soak the dates until they are soft.

2. When they are soft and juicy, pulse with the walnuts until it crumbles.

3. add in the coconut oil (it helps them set and firm up in the fridge)


assembeling

☞ cut thin strips of parchment paper and lay them into the muffin tin.



    press the crust into the tins, up the «walls» as well.




refrigerate until its firm. Whip up the mousse that has set in the fridge 



spoon in the mousse, use your fingers to "smooth it out" 


refrigerate until you want to eat them


Garnish with berries and enjoy!
